Can you imagine trying to start a college teaching career based on 110 day degrees? It won't work, the schools know better. Of course if you want to be an on-line, part-time, low-paid, professor, well, maybe Excelsior will work, but poorly. But if you have the goal of teaching at some local B&M college, you had best get degrees from something respected and known.
UOP has its place in the DL world, but not as a good school or choice, just useful to some in particular cases.
The main problem with UOP is more than just a low quality education. They are a for-profit program (the Apollo Group) and that means their degree programs are twice to three times that of any other program. By no means should anyone consider one of those degree by COD programs, but you should learn something more than you knew when you began the degree program. Kennedy-Western and others provide that happy medium. To have to take courses you could probably teach is stupid, which is what B&M programs require. Like you indicated, they are not for everyone, but for some, a KW type of degree program is great.
