Why should a Catholic school be worried about offending Muslims? The two religions are clearly incompatible. I don't see any Islamic colleges bending over backwards to cater to Catholicism. A Catholic school should defend its professors and its Catholic beliefs.
Anything derogatory the professor said against the Islamic culture is certainly justified, as demonstrated by their physical attack and mutilation against him. No civilized culture would do that.
